Appearance: Jet black, persistent tan head
Aroma: Fairly complex aroma, roasted malt, vanilla, cinnamon
Mouthfeel: Medium Full to Full Body, not chewy, nice carbonic bite on the finish. 8.5% ABV hides well.
Flavors: Nice use of vanilla, meaning it is not overpowering. The touch of cinnamon is noticeable in the middle of the taste. This beer has great balance, just a slight sweetness from the lactose sugar on the finish.
Aftertaste: Nice mild sweet aftertaste that doesn’t linger
Food Pairing: I’m a fan of using simple foods to pair with complex beers. 1 scoop each of vanilla and chocolate ice cream would pair great with this beer. The vanilla ice cream would drown out the vanilla in the beer highlighting the cinnamon. The chocolate would pair well with the dark malt flavors and showcase the residual sweetness of the lactose sugar.
