The Sly Fox in Southern Pines, NC continually delivers on their draught beer service. I look for three main things when I critique draught beer service; proper system pressure balance, proper glassware and beer clean glassware. The pictures below prove they have proper glassware and that it is beer clean.
You will just have to take my word that their system balance is dialed in perfectly. I am most impressed that their system balance is dialed in considering the business has a wide variety of beer. Sly Fox dispenses American craft beer ales and lagers that have 2.5-2.7 Volumes of CO2 all the way up to German Hefeweizens that clock in at 4.5 Volumes of CO2. 2.5 Volumes of CO2 means that a 120z bottle of Pale Ale has enough CO2 dissolved into the beer to fill 2.5 twelve ounce beer bottles. It is hard to keep both 2.5 and 4.5 volume beers on the same draught system without having secondary regulators for each draught line.
